Pumpkin Puree

I had one of the kids pumpkins survive from Halloween and wanted to make my own pumpkin puree so I cooked it up.  here’s what I did…

preheat oven to 400 degrees.

  cut pumpkin in half, scoop out the insides, place upside-down on baking sheet, poke with fork a couple of times.  bake for 45-60 minutes. (check readines by sticking a fork in it.

this is what our pumpkin looked like when it was done baking.  it was a small pumpkin. 

 

scoop the insides from the shell and stick it in the blender.  blend well.  isn’t it a beautiful color!?

 

I got exactly 2 cups from our little pumpkin 🙂
